Coconut Popsicles

Ingredients

1 cup coconut water

1/2 cup coconut sugar

3 cups coconut milk

1/2 teaspoon pure vanilla extract

1/4 cup finely shredded coconut

1 cup fresh raspberries

Directions

Bring coconut water and coconut sugar to simmer, let it cool than stir in coconut milk, vanilla extract and shredded coconut pour mixture into BPA free molds and freeze you may add fresh fruit (optional) may dip the finished pops into melted chocolate, then return them to the freezer until chocolate sets 1,2 minutes (optional) roll them in toasted coconut or almonds. Delicious!
